How to Score Sourdough

Scoring is functional, not decorative. The cut you make before baking determines where the loaf tears open under oven spring — not just how the crust looks once it's out of the oven.

Why Scoring Matters

Once a loaf goes into a hot oven, the yeast has one last burst of activity, trapped gas expands rapidly, and the dough pushes outward before the crust sets. That expansion has to go somewhere. If the loaf isn't scored — or scored too shallow to matter — the dough still expands, but it tears wherever the crust structure is weakest. That's often on the side, along a seam from shaping, or on the bottom against the baking surface. The result is an uneven "blowout": a ragged split in an unplanned spot, sometimes pulling the loaf out of shape entirely.

Scoring solves this by creating a deliberate weak point. A clean cut through the surface tension of the dough gives the expanding gas an obvious path of least resistance. That cut opens first, before any other seam has a chance to fail, and it opens in the place and direction you chose. Everything else about scoring — blade choice, angle, depth, timing — is really about controlling that one outcome: which spot fails first, and how it fails.

Tools

A proper lame — a razor blade mounted on a thin handle, usually with a slight curve — gives the cleanest, thinnest cut available. The thin profile slices through the surface with minimal drag, and the curve lets you angle the blade without changing your grip. A bare double-edged razor blade held between two fingers works almost as well and is what most bakers used before lames became common equipment.

A sharp kitchen knife or a serrated bread knife can work in a pinch, but neither is built for this. Both are thicker than a razor edge, so instead of slicing they tend to drag and compress the dough surface as they pass through, tearing rather than cutting cleanly. This is especially visible on wetter, higher-hydration doughs, where a dragged cut pulls the surface out of shape instead of leaving a crisp line. If a lame or blade isn't available, a very sharp paring knife is a better substitute than a bread knife.

Blade Angle

There are two basic approaches, and neither is more correct than the other — they're style choices that produce different results.

A cut held nearly perpendicular to the dough surface, close to 90°, gives a deep, straight slash. Under oven spring, this kind of cut opens wide and dramatically, producing the classic single-slash look with a broad, open crack down the loaf.

An angled cut, roughly 30–45° relative to the surface, shaves a thin flap of dough rather than slicing straight down. As the loaf expands in the oven, that flap lifts and curls back on itself, forming the raised, blistered "ear" that's become a hallmark of artisan-style loaves. The shallower the angle, the more pronounced the ear tends to be, though very shallow angles need a steadier hand to execute cleanly.

Neither approach is objectively better — a 90° slash and a 45° ear cut on the same dough, baked side by side, will rise to a similar height and crumb structure. What differs is entirely visual. Bakers often pick one style and stick with it because consistent muscle memory produces a more consistent-looking result than switching between approaches loaf to loaf. If you're undecided, practice one angle until it's repeatable before experimenting with the other.

Depth

Roughly 1/4 to 1/2 inch (about 6–12mm) is a reasonable range for most home loaves. Depth interacts with everything else scoring is trying to do — the cut needs to be deep enough to actually function as the loaf's weak point.

Too shallow, and the cut doesn't reach past the surface tension holding the dough together. In that case the score doesn't reliably win the race against other weak spots, and the loaf can still blow out somewhere else even though it was scored. Too deep, particularly on a dough that's already well-proofed and gas-filled, and the cut can deflate the loaf slightly right where you made it — gas escapes through the cut immediately instead of building pressure for oven spring, and you lose height exactly where you wanted lift.

Cold dough scores easier: A chilled, fridge-retarded loaf holds its shape and firmness far better than a soft, warm one, which makes it noticeably easier to cut cleanly without dragging or deflating the surface. This is a large part of why cold scoring — pulling the loaf straight from the fridge to score and bake — is such common practice, beyond the flavor benefits of a cold retard.

Timing Relative to Proofing

How the dough behaves under the blade depends heavily on how far it's proofed. A dough that's well-proofed or even slightly under-proofed still has enough structure to hold its shape under a blade. The cut stays crisp, the surrounding dough doesn't sag into the cut, and the score holds its intended line through the oven.

A significantly over-proofed dough is a different problem. The gluten structure has weakened and the dough is fragile — a cut that would have been clean an hour earlier can now cause the whole surface to deflate or tear unpredictably as the blade passes through. With a dough that's clearly gone too far, the best options are either a very fast, shallow score performed right before the loaf goes into the oven with no delay, or skipping a deep score altogether and accepting whatever the crust does on its own. Neither fixes over-proofing, but both limit how badly scoring can make it worse.

One Cut vs. Multiple

A single confident cut down the center of the loaf, or slightly off-center, is the simplest and most forgiving pattern to execute. It requires one motion, one decision about angle and depth, and it's hard to get wrong in a way that ruins the loaf.

Multiple decorative cuts — wheat-stalk patterns, cross-hatching, leaf motifs — look striking when they work, but they demand a firmer, well-structured dough that can hold several distinct lines without them merging into each other. On a softer or less-developed dough, adjacent cuts tend to pull toward one another as the loaf expands, and what was meant to be a pattern becomes one large, uneven blowout. Multiple cuts are worth attempting once a single center score is reliable, not before.

If you do move to a pattern, keep the individual cuts shallower than you would for a single center score — closer to the 1/4 inch end of the depth range rather than 1/2. Shallower cuts give each line less capacity to expand on its own, which is what keeps the pattern distinct instead of collapsing into a single opening. A well-structured, slightly firm dough (leaning toward the under-proofed side rather than the over-proofed side) also holds a pattern far better than a slack, fully proofed one.

Common mistake: Sawing the blade back and forth instead of using one confident, fast motion. Wet, sticky dough doesn't respond well to a sawing action — it drags and tears the surface rather than being sliced. A single fast pass, even an imperfect one, produces a cleaner result than several careful back-and-forth strokes.

Bottom Line

Scoring is about directing where a loaf fails under oven spring, not decorating it. A sharp blade, a deliberate angle, a depth in the 1/4–1/2 inch range, and a dough that hasn't gone past a reasonable proof window are what make a cut open the way you intended. Get the proofing timing right first — everything about scoring gets easier and more forgiving once the dough itself is cooperating.
