A proofing basket — banneton, brotform, whatever your baking tradition calls it — is not required to bake sourdough. It solves two specific problems: surface moisture and shape support. Whether either problem applies to your dough is worth working out before you buy one.
A proofing basket does two jobs during the final proof, and neither of them is fermentation. The first is moisture management. Natural materials — cane, rattan, wood pulp — wick a thin layer of moisture away from the dough's surface as it sits. That drier surface skin is easier to score cleanly and tends to produce a slightly crisper, more pronounced crust once it hits the oven. The classic ridged cane basket does this most aggressively, and as a side effect leaves the dough with the decorative spiral or coil pattern that's become shorthand for "artisan loaf" — that pattern is purely cosmetic, a flour-dusted negative image of the ridges pressed into the dough's skin.
The second job is structural. Sourdough dough at typical hydration is slack, especially once you get above about 75% water. Left on a flat surface for an hour or two of final proof, that dough spreads outward instead of holding a round or oval shape. A basket contains it — the walls physically stop the dough from spreading sideways, so it keeps rising up rather than out. That's the part that matters most for higher-hydration doughs; the moisture-wicking is a secondary benefit.
Neither of these functions touches fermentation itself. A basket doesn't speed up or slow down how fast your starter or dough ferments, and it doesn't change how much gas the yeast produces. It only changes the environment the dough sits in while that fermentation happens — drier or damper surface, contained or unsupported sides. That distinction matters when troubleshooting: if a loaf comes out under-proofed or over-proofed, the basket is rarely the cause. Look at temperature and timing first.
Cane and rattan are the traditional choice and the best at moisture-wicking, which is why they're the standard in professional bakeries. They need regular dusting with rice flour to keep dough from sticking to the ridges, they leave the classic ridge pattern, and they absorb odors and moisture over time — they need to air-dry fully between uses or they'll mold. Coiled cane lined with cloth is a middle ground: the cloth liner means no ridge pattern and easier release, but you lose some of the moisture-wicking that makes cane baskets worth using in the first place.
Plastic and silicone baskets are the low-maintenance option. They wipe clean, need no seasoning or drying ritual, and won't mold in a humid kitchen. The tradeoff is that they wick almost no moisture, so the dough surface stays tackier through the proof — you'll generally need a more generous flour dusting to get a clean release, and you won't get the ridge pattern at all unless the basket itself is molded with ridges.
Lower-hydration doughs — roughly below 70% water — are stiff enough to hold their own shape without much outside support. For these, a well-floured bowl lined with a clean kitchen towel does the same structural job as a basket. This is a completely standard substitute, not a compromise home bakers should feel bad about: it produces a perfectly good loaf. The only differences are cosmetic — no ridge pattern — and a slightly tackier surface at bake time, since cloth wicks less moisture than cane. If you're baking straightforward sandwich-style loaves in the 65–70% range, a towel-lined bowl will get you most of the way there.
High-hydration doughs — 80% and up — are where a basket earns its keep. Slack dough at that hydration spreads noticeably on a flat surface or even in a loosely supportive bowl, and the structural containment a basket provides becomes the difference between a tall, open-crumbed loaf and a flat one. If you're regularly working with wetter doughs, a basket pays for itself quickly. If you mostly bake 70%-ish loaves, the case for buying one is weaker — you're paying for moisture-wicking and a pattern, not for solving a shape problem you actually have.
Whatever vessel you proof in, shape and surface are only half the equation — the timing of when to shape and how long that final proof should run matters just as much for the finished loaf.

Most home bakers do fine with a single 900g–1000g round basket and add an oval later if they settle into batard-shaped loaves. If you bake a range of dough weights — a small weekday loaf and a larger weekend one — it's more useful to own two correctly sized baskets than to force one basket to cover both. An oversized basket for a small dough is a common, avoidable cause of a flat, wide loaf that looked fine going into the oven but lost its height during baking.
Dough sticking to a cane basket is almost always a flouring problem, not a defective basket. The standard fix is a mix of rice flour and all-purpose flour — rice flour resists absorbing moisture from the dough surface better than wheat flour, so it stays a dry, slick barrier for longer during the proof. Dust generously into the ridges, not just across the surface, and tap out the excess before you place the dough.
After each use, let a cane or rattan basket dry completely before storing it. Damp cane in a closed cupboard is exactly the environment mold needs, and once mold sets into the weave the basket is generally not salvageable. A quick brush-out to remove old flour and a few hours of open-air drying is enough for routine use.
