Baking Sourdough in Summer

The same recipe that worked perfectly in winter can badly over-ferment in a hot kitchen. Temperature is the single biggest variable in fermentation speed, and summer changes it more than most bakers account for — often quietly, over the course of a single bake, until the dough is already past where you wanted it.

What Actually Changes in Summer

Three things shift at once when the season turns warm, and each one pushes fermentation faster on its own. Kitchen ambient temperature is the obvious one — a room sitting at 26–28°C instead of 21–22°C is not a minor difference to a wild yeast and bacteria culture; it's a substantial acceleration in metabolic rate. Tap water temperature moves too, and it's easy to overlook: water coming out of the pipes in summer can run several degrees warmer than in winter, which raises the starting temperature of the mixed dough before fermentation even begins.

The third factor is the starter jar itself. A jar that sits near a sunny window, on a countertop close to a warm appliance, or in a kitchen that gets direct afternoon sun can run noticeably warmer than the room's stated air temperature. None of these three factors is dramatic in isolation, but they compound. A recipe written with a cooler season in mind has no way to account for any of them, which is why timelines that felt reliable in spring can fall apart in July and August.

It's also worth noting that these three factors don't necessarily move together. You can have a cool, air-conditioned kitchen with warm tap water, or a warm kitchen with a starter jar kept in the coolest corner away from the stove. Diagnosing which of the three is doing most of the work in your specific setup is more useful than treating "it's summer" as a single uniform adjustment — a baker in an air-conditioned apartment in a hot climate faces a different problem than one in a naturally ventilated kitchen with no air conditioning at all.

Adjust the Starter Feed First

The starter is usually the first thing to drift, because it's the most sensitive to temperature and the easiest to check on a fixed schedule out of habit. A starter that peaked in 6–8 hours in spring might peak in 3–4 hours at summer kitchen temperatures. If you keep checking it on the old timeline, you will consistently find it well past peak — deflated, sour-smelling, and already sinking rather than domed.

Check earlier than your usual schedule rather than assuming the old timeline still applies. If you want to keep something closer to your familiar schedule instead of feeding twice as often, consider a smaller inoculation ratio — a lighter feed, with a smaller proportion of mature starter relative to fresh flour and water. That stretches the timeline back out without changing the ambient temperature itself.

Both adjustments solve the same underlying problem from different angles. Checking earlier costs you nothing but a slightly inconvenient glance at the jar; changing the ratio actually shifts the timeline itself, which matters if your schedule is built around a fixed window — feeding before work, say, and mixing dough after you get home. Neither is inherently better; pick whichever fits how rigid your day actually is.

Use Cold Water

Mixing dough with cold or ice water is one of the simplest, most effective summer adjustments available, and it requires no change to the recipe's ratios or technique. It lowers the dough's starting temperature directly, without touching flour hydration, starter percentage, or salt. That lower starting point buys back time on the fermentation clock — the dough begins its bulk rise from a cooler baseline, so it takes longer to reach the same internal temperature and the same degree of fermentation that a warm-water dough would hit sooner.

This is worth doing even before you touch anything else in the process, because it's free, reversible, and immediately measurable with a thermometer. If your kitchen is consistently hot through the season, cold water can become a standing habit for the warm months rather than a one-off fix.

Shorten Bulk Fermentation Checks

Don't walk away for the usual number of hours. In a hot kitchen, check the dough visually more often — every 30 to 60 minutes instead of every one to two hours — because everything is moving faster and the window between under-proofed and over-proofed narrows accordingly. A dough that would have given you a comfortable hour of margin in cooler weather can go from looking underdeveloped to visibly overproofed in a much shorter stretch when summer heat is accelerating every stage of the process at once.

This is less about any single visual cue and more about frequency. Looking at the dough more often costs nothing and catches the moment where it's ready before it slides past. If you're used to setting a timer and coming back once, treat summer as the season where that habit needs to change.

Moving dough to the refrigerator earlier in the process — as soon as it shows real activity, rather than waiting for it to nearly finish bulk at room temperature — is the most reliable way to regain control in a hot kitchen. The fridge is your best lever in hot weather. No other adjustment gives you as much control back as fast. Cold water and more frequent checks help at the margins, but an earlier retard is what actually stops a hot kitchen from running the fermentation ahead of your schedule.

Watch the Starter Itself for Summer-Specific Issues

A starter kept out at high room temperature can peak and crash faster than expected, and if you're only feeding once a day, it may spend a large part of that day well past peak before you get back to it. In sustained summer heat, some bakers move to two feeds a day instead of one just to keep the culture at its best rather than repeatedly overshooting and recovering from a crash.

Also watch for a starter that seems unusually watery or unusually sour compared to how it behaves the rest of the year. Both can indicate the culture is regularly sitting well past peak in the heat before you get to it — the liquid separating out on top, and the sharper smell, are both signs of a starter that has been acid-dominant for longer than intended. If you notice either, tightening the feeding schedule is usually the fix, not changing the flour or ratio.

Pull it out, feed it once, and give it a normal room-temperature cycle to get back to its regular rhythm before you rely on it for a bake.

Summer doesn't change sourdough baking in principle — the same biology, the same stages, the same signs of readiness all still apply. What changes is speed, and by more than most bakers expect. Make those four habits and the season stops being a variable you have to fight.
