The Overnight Sourdough Schedule for People With a Day Job

Most sourdough schedules are written by people who are home all day. Feed the starter, check it every hour, mix when it looks right, shape when the dough looks right, bake when the oven and your afternoon line up. A work day doesn't allow that kind of attention. Here's how to run a real sourdough schedule around fixed hours away from the kitchen.

The Core Conflict

A starter's peak window is short — usually 30 to 60 minutes. Bulk fermentation has more slack, but it still needs checking, folding, and a decision about when it's done. A 9-to-5 job removes exactly the kind of flexibility both of those steps assume. You can't fold dough at 11 AM in a meeting, and you can't catch a starter at peak if peak lands while you're commuting.

The fix isn't a stricter clock. It's accepting that some parts of the process have to run unsupervised, and building the schedule so the unsupervised stretches fall in windows where a little drift doesn't matter — overnight sleep, or the eight-to-nine hours you're out of the house. That means leaning on temperature, not attention, to control the pace of fermentation during the hours you can't watch it.

Reverse-Plan From the Bread You Want

Don't start planning from "when do I feed the starter." Start from when you want to eat the bread — dinner tonight, or breakfast tomorrow — and work backward through bake, proof, shape, bulk, mix, and feed. Each step has a rough duration; stack them backward from your target and you get a feed time, not the other way around.

This is also why fixed clock times don't transfer between kitchens. Your starter's rise speed, your room temperature, and your dough's hydration all shift the math. The schedules below use example clock times to show the shape of a day — treat the actual hours as a first draft you adjust once you know your own starter's pace.

The single easiest lever for a 9-to-5 baker: put your bulk dough or your starter in the fridge, and stop trying to fight the clock in real time. Cold buys you hours of margin without asking you to be present. Every schedule below depends on this one substitution.

Schedule 1 — Feed Before Bed, Bulk Overnight, Bake Before Work

This is the fastest route to fresh bread on a weekday morning, but it needs either a genuinely cool room (16–18°C) or a fridge with enough space for your bulk container. Example timeline — shift every time to match your own starter and room:

The risk here is an apartment that runs warm overnight. A bulk left at 24°C instead of 17°C can finish fermenting four or five hours early — meaning it's over-proofed and slack by the time your alarm goes off. If your home doesn't reliably stay cool, use the fridge for this step instead of a "cool room," or move to Schedule 2.

Caution: a warm apartment is the most common reason an overnight plan collapses. If your bedroom or kitchen runs above 21°C at night, don't rely on ambient cooling for an overnight bulk — retard it in the fridge instead, where the temperature is controlled regardless of the season.

Schedule 2 — Feed at Lunch, Mix After Work, Cold-Retard, Bake the Next Morning

This is the most forgiving option for a full work day, because the fridge — not your attention — carries almost the entire fermentation. Example timeline:

It's the schedule to default to if you're not confident about your room temperature or your starter's exact rhythm yet.

Schedule 3 — Weekend-Only Full Control

If keeping a starter fed on a strict weekday rhythm isn't realistic, don't fight it — confine active baking to the weekend and let the starter rest in the fridge the rest of the week. Example timeline for a Friday-to-Saturday bake:

This is the lowest-stress option for anyone who doesn't want to manage a live starter through a work week. The tradeoff is frequency — one bake a week instead of two or three — but it removes every weekday timing constraint entirely.

Why the Fridge Is the Tool That Makes This Work

Every schedule above depends on the same mechanism: fermentation at refrigerator temperature (around 4°C) continues, but it slows down sharply. Yeast activity and lactic acid bacteria metabolism both drop as temperature falls, and near 4°C they're operating at a small fraction of their room-temperature pace — active, but barely.

That's the property that turns an 8-to-12 hour work day or sleep window from a risk into a buffer. At room temperature, dough that's ready in 4 hours will be badly over-proofed by hour 10. In the fridge, that same dough might still be in a workable window at hour 14 or 16, because the cold has stretched out the timeline without stopping it. You're not preventing fermentation — you're slowing it down enough that being away for a fixed block of hours no longer requires split-second timing.

This also means the fridge is forgiving of estimation error. You don't need to know exactly how long your dough will take before you leave for work or go to sleep — you need it to be somewhere in a "not yet fully bulked" state before it goes in cold, and the slow pace in the fridge gives you a wide window to pull it back out.

A 9-to-5 schedule doesn't require giving up sourdough or reducing it to whatever fits a weekend. It requires moving the parts of the process that need close attention into the hours you're actually home, and pushing the long unsupervised stretches — sleep, the work day — onto the fridge, which tolerates being ignored far better than a bowl at room temperature does.
