Sourdough Starter Troubleshooting: Symptom, Cause, and Fix
A sourdough starter is a living culture, and like any living system it occasionally shows signs of stress. This guide is organized by symptom, not by ingredient: find what you're actually seeing, understand the microbial cause behind it, and apply the specific fix — no guesswork.
How to Read a Starter's Signals
Every sourdough starter is a symbiotic culture of wild yeast and lactic acid bacteria (LAB) living in a flour-and-water paste. Wild yeast produces the CO2 that makes a starter rise; LAB produce the lactic and acetic acids that give it tang and help suppress unwanted organisms. Nearly every symptom below is what happens when that balance shifts — usually because of temperature, feeding ratio, or timing — not because the starter is fundamentally broken. Identifying which side of the balance moved is what turns a guess into a fix, rather than a discard-and-restart. Symptom: The Starter Isn't Rising at All
Cause: It's Still Young
A starter built from scratch commonly shows no visible rise for the first 3–5 days. Cause: Too Cold
Wild yeast metabolism slows sharply below about 20°C and becomes very sluggish below 15°C. A starter kept on a cold counter or near an exterior wall in winter can look completely inactive while actually being healthy. Solution: move it somewhere consistently 24–27°C — near a proofing box, on top of the refrigerator, or inside a turned-off oven with the light on.
Cause: Chlorinated Water or Very Old Flour
Chlorine and chloramine, both common in tap water, are added specifically to suppress microorganisms — they don't distinguish between pathogens and your starter's culture. Solution: use filtered water, or let tap water sit uncovered for 24 hours to let chlorine (though not chloramine) evaporate. Very old, low-enzyme-activity flour can also starve a starter of fermentable sugars; switching to a fresher bag of flour for a few feedings often resolves a mysteriously sluggish starter.
Symptom: Mold, Kahm Yeast, or Hooch — Telling Them Apart
This is the single most important diagnostic distinction in starter care, because two of the three are completely harmless and one is a genuine food-safety issue.
Hooch: A Grey or Brown Liquid Layer
Hooch is alcohol and water, a natural byproduct of yeast fermentation when a starter has run out of food. It smells sharply alcoholic, sometimes like nail polish remover, and pools on the surface or separates within the culture. It is completely harmless. Either stir it back in for a more sour starter, or pour it off for a milder one, then feed as usual. Frequent hooch simply means you're feeding too infrequently or too dilutely for your kitchen's temperature — shorten the interval between feedings.
Kahm Yeast: A White, Dry, Wrinkled Film
Kahm is a separate, oxygen-loving wild yeast species that forms a flat, dry, often wrinkled or bubbly film across the entire surface of a starter left undisturbed too long, especially in warm, humid kitchens. It smells mildly yeasty or musty but never rotten. It's not dangerous, but it should be scraped off completely — every visible trace — before feeding. If kahm keeps returning, feed more frequently and keep the jar loosely covered rather than airtight to reduce the still, humid surface conditions it favors.
Mold: Any Fuzzy Growth, in Any Color
True mold is always fuzzy in texture, never a flat film — this is the single most reliable visual test. Color is not a reliable safety indicator on its own: mold can be green, black, or grey, but the color that demands the fastest reaction is pink or orange, which can signal contamination by Serratia marcescens or related bacteria, historically responsible for the reddish "bleeding bread" phenomena recorded since antiquity. Whatever the color, fuzzy growth means the entire starter must be discarded — not scraped and saved. Mold hyphae extend microscopically below the visible surface throughout the culture, so removing the top layer does not remove the contamination. Symptom: Starter Smells Like Acetone or Something Rotten
Sharp, Nail-Polish-Remover Smell
This is acetone, a genuine metabolic byproduct that yeast produces under starvation stress, once its preferred food source is exhausted. Solution: discard most of the starter, feed the remainder immediately, and shorten your feeding interval going forward — this smell is simply a hungrier starter than your current schedule accounts for.
Rotten, Sulfurous, or "Vomit-Like" Smell
This usually signals lactic acid bacteria producing excess butyric acid, which happens when bacteria stay active while yeast activity has slowed — commonly from a starter left too long at cool temperatures, or one that's been neglected for an extended stretch. Solution: increase feeding frequency at a warmer temperature (24–27°C) for 2–3 consecutive cycles; this restores yeast dominance and the smell resolves within a few days. A pleasant tangy, yogurt-like, or faintly fruity smell is the healthy baseline you're aiming to return to.
Symptom: Starter Rises Fast Then Collapses Before You Can Use It
A starter that peaks and deflates within an hour or two of you checking it hasn't failed — it's simply overshooting its window because of ambient warmth, a very active culture, or a feeding ratio with too much headroom. Symptom: Bread From a Healthy, Active Starter Still Comes Out Dense
This is almost always a dough-handling issue rather than a starter-health issue, since a starter that reliably doubles and passes the float test is, by definition, fermenting properly. Check hydration level and gluten development before troubleshooting the starter further — under-hydrated, under-developed dough traps less gas regardless of how active the leaven is.
Prevention: A Simple Weekly Routine
- Feed at a consistent time and ratio. Irregular feeding is the root cause behind most hooch, kahm, and off-smell symptoms.
